A commercial cooking range is usually scrubbed at the end of service, when the grease is cool, hard and awkward to reach. The range itself does most of the work, yet the results depend heavily on the accessories attached to the steam cleaning machine. The right set of nozzles, brushes, extension tools and recovery tools changes the job from hours of scraping into a repeatable routine. The list below covers what to look for when specifying accessories with commercial kitchen steam cleaning equipment.

What an accessory list should cover

Accessories for a fixed steam machine normally fall into four groups: delivery (nozzles and lances that put steam on the surface), agitation (brushes and pads that break the bond between grease and metal), reach (extension wands and hoses for the parts of the range you cannot touch from the floor), and recovery (vacuum or extraction tools that take the loosened soil off the surface before it re-deposits). A quote that covers only delivery nozzles will leave the physical work unfinished, because steam alone softens grease rather than removing it.

Accessories worth specifying

A fan or jet nozzle spreads steam across a flat griddle top or splashescreen instead of concentrating it in one spot, which shortens dwell time on large horizontal surfaces. A narrow pencil or concentrated jet nozzle does the opposite: it directs steam into the gaps around burner heads, drip trays and pilot assemblies where grease builds up in layers. Both shapes earn their place, and most kitchens use them in sequence rather than choosing one.

Heat-resistant brushes with brass or stainless wire, and nylon pads for coated or polished surfaces, handle the agitation step. Metal bristles on a chrome or stainless splashback can leave visible scratches, so the brush grade needs matching to the finish being cleaned. Extension lances and a longer steam hose matter in a line of ranges: reaching the rear of a deep range or the underside of an overhead hood from a standing position is what keeps the task something staff actually complete.

A vacuum attachment is the accessory that changes the workflow most. On the PowerDe HW02 steam cleaner, the specification lists dry steam and wet steam modes together with a vacuum cleaner, so the loosened grease and condensate can be lifted off the surface in the same pass instead of being pushed to the floor with a squeegee. That reduces the standing water in the cooking line, which is the part of cleaning that creates slip complaints and extends the task into closing time. For range hood work, a flat floor-head tool with a recovery squeegee edge does the same job on the kitchen floor.

Machine capability behind the accessories

Accessory performance depends on the machine feeding it. The HW02 is a 220 V fixed unit with 6 kW heating power, steam temperature at 160°, vapour pressure at 0.8 MPa, and an 80 L SUS304 tank, taking tap water through a 4-point internal-tooth joint (1/2 inch). Its dimensions, 1,200 × 800 × 1,200 mm including handles, mean it sits in a fixed position, so hose length and lance reach decide how far one operator can work without moving the machine. Dry steam carries heat with little free water, which suits overhead and electrical-adjacent surfaces; wet steam supplies the volume of water that flushes heavy grease from a griddle well.

The machine's safety design — leakage protection, short circuit protection, high temperature protection, high voltage protection, water shortage protection and high voltage explosion protection — matters in a kitchen environment where the equipment is fed from a normal supply and operated near water.

Points to confirm with the supplier

  • Thread size, fitting type and hose length for each nozzle, so accessories can be changed mid-shift without adapters.
  • Whether brush bristle material is safe for the specific finishes in your kitchen, including coated griddles and polished stainless.
  • Spare-part availability and lead time for nozzles, seals, hoses and brush heads, which are the items that wear first.
  • For duct, hood interior and electrical-adjacent work, what steam volume and dry-steam setting the supplier recommends, since published steam volume is not listed on the HW02 specification table.

Shenzhen PowerDe Automation Precision Equipment is an intelligent cleaning equipment manufacturer based in Shenzhen, and its PowerDe cleaning equipment range includes fixed, hand-pushed and driving-style steam machines. Send the layout of your cooking line, the finishes you need to protect, and your current closing routine to sales@powerde.net, and the accessory set can be specified against that workflow rather than a standard catalogue list.
