How can staff prepare fryers and cooking equipment for a steam-cleaning trial?

Steam cleaning is showing up in more kitchens because hot steam can soften baked-on grease without heavy scrubbing or chemical degreasers. But a trial only gives useful answers when the equipment, the operator and the room are prepared for it. The steps below help staff get a fryer and the surrounding cooking equipment ready before the machine is switched on.

Agree on what the trial should prove

Before anything is moved, choose two or three representative surfaces: the fryer exterior and splash guard, one section of exhaust hood filter, and the surround of a griddle or stovetop. Write down what your current cleaning routine costs in time and effort on those surfaces. Without that baseline, it is hard to tell whether steam actually saves work or just feels different.

Check power, water and drainage first

A fixed high-pressure unit such as the Fixed Steam Cleaning Machine PowerDe HW02 runs on a 220 V supply with a 6 kW heater and connects to a tap-water inlet, so the trial area needs a matching outlet, a water connection, and a place for the run-off to drain. Confirm the circuit and sockets are in good condition and well away from the wet zone, route hoses clear of walkways, and lay non-slip mats where water will collect.

Make the fryer safe to work on

  • Switch the fryer off at the machine and isolate it at the breaker, then let it cool fully.
  • Drain the oil into a sealed container once it is cool enough to handle. Never steam a hot or full oil vat.
  • Take off baskets, racks and splash panels where the design allows, and clean both sides of each part separately.
  • Cover or move nearby electrical panels, gas controls, thermostats and cords. Steam and electricity do not mix.
  • Put on heat-resistant gloves, safety glasses, a long-sleeved apron and closed non-slip shoes before any steam is released.

Remove loose grease before steaming

Steam is most effective on the thin, polymerised grease film that clings to surfaces, not on heavy buildup. Scrape away thick deposits and wipe up pooled oil first. This shortens steaming time, keeps hot grease from spattering, and stops nozzles from clogging during the trial.

Match the steam mode to the soil

Machines that switch between dry and wet steam let staff pick the mode that fits the mess: dry steam for tough, baked-on grease, wet steam for softer residue. Ask the supplier what steam temperature and pressure the unit delivers. The HW02 product page, for example, lists steam at 160 °C and a vapour pressure of 0.8 MPa. Practise on a small, inconspicuous area first, and keep the nozzle moving over the surface instead of holding it in one spot.

Record results while you work

  • Photograph every test surface before and after steaming.
  • Note the time and physical effort each surface takes, and where scrubbing is still needed after the steam passes.
  • Check seams, hinges and fasteners at the end of each session, and dry any moisture that collects there.
  • Note how often the 80-litre tank needs topping up during a full clean, and whether refilling interrupts the workflow.

Judge the trial against your current routine

When the trial ends, compare the photos and time notes with your existing process: labour time per clean, chemical purchasing and storage, slip risk from greasy floors, and how the staff who did the work felt about it. A steam unit that wins on one surface and loses on another is still a useful result, because it shows where steam belongs in the schedule and where the old method should stay.

A well-prepared trial turns commercial kitchen steam cleaning from a demo into a real decision. PowerDe's cleaning equipment pages describe the fixed and mobile models used for central kitchen degreasing work, and the company's team can help plan a trial around your kitchen layout, power supply and drainage before you commit to a machine.
